Salad (2 servings): 2 bulbs endive thinly sliced, 1/2 head raddichio thinly sliced, 1/3 cup dried cranberries, 1/4 cup chopped walnuts, 2 clementines segmented, 1/2 cup finely chopped seedless cucumber, 2 T fresh mint thinly sliced 🍃🎉
