This dish was refreshing, sweet and tangy … and perfect for my warm weather dreams. Kinda keeping in my tropical-esque theme recently ??✨

Recipe: 1 bulb endive + 1/4 grapefruit sliced and rind removed + 1/2 cup seedless cucumber small diced + 2 T chopped pistachios + 1 T thinly sliced fresh mint leaves + 1 mandarin orange sliced and segmented. ?✨

Dressing is the following: 2 T olive oil + 1/8 cup mandarin orange juice + 1/4 teaspoon each kosher salt and pepper + 1 T apple cider vinegar + 1 teaspoon maple syrup + 1/4 teaspoon dijon mustard. Whisk thoroughly! ??✨
