Recipe for this sauce 🌿🍅

INGREDIENTS: 1 large zucchini diced, 1 medium onion finely chopped, 1 medium eggplant about 1cm diced, 1 28oz. can crushed tomatoes, 1 pint sliced grape or cherry tomatoes, 1 teaspoon salt, 1/2 teaspoon pepper, 1 T dried basil, 1 T dried oregano, 2 T olive oil, 4 cloves garlic minced, finely chopped fresh basil and flat leaf parsley for garnish. 🌿🍅

DIRECTIONS:
Heat 1 teaspoon oil over medium heat in a large pan and add zucchini. Cook until browned but still firm, stirring frequently, about 5 minutes. Remove from pan. Add remaining oil to pan, along with onions and eggplant, and cook about 15 minutes, stirring frequently, with a dash of salt. Add garlic, cook 2 minutes. Add remaining sauce ingredients except fresh herbs and cover on medium low heat for about 15 minutes. Add the zucchini back to the sauce. Stir gently. Add to pasta. Top with fresh herbs.🌱🍅
