Eggplant parmigiana🍆
Happy Tuesday, my insta friends🤗. Sharing a twisted classic Italian dish inspired by a restaurant here – rolled eggplant parmigiana.
Recipe (if you omit pasta, one eggplant is good for 2 servings)
~ 1 large eggplant, sliced to 1/4 inch thick
~ (MixA) 3/4 cup flour + 1 teaspoon dried basil + 1/2 teaspoon salt
~ (MixB) 3/4 cup Italian breadcrumbs + 1/4 cup cashew parmesan
~ chickpeas water or unsweetened plant-based milk
~ 1 cup of cherry tomatoes, halved
~ 1 cup of marinara sauce
~ 1/2 cup of vegan mozz (used @miyokoscreamery )
~ 1/4 cup balsamic vinegar, reduced until thickens
~ 1 small onion, diced
~ 3 cloves garlic, minced
~ spaghetti of your choice
~ oil, salt to taste
Prep dipping station:
Rub eggplant slice with MixA, dip in chickpea water, and coat in MixB.🤓
Place eggplant slice on an oiled baking pan. Bake at 425F for 20 mins and flip halfway. Once eggplant turns light brown and cooked, remove from oven, add mozz and roll it up. Bake for another 5-10 mins until cheese melts.
In a heated pan with 3 teaspoons oil, sauté onion and garlic until soft, add tomatoes and marinara sauce, let simmer for 5 minutes. Season with salt. Cook spaghetti until al dente. Place spaghetti on a plate, then top with eggplant and slather tomato sauce over, finally drizzle with balsamic vinegar.😊
