EASY VEGAN BLACKBERRY COBBLER BARS

2 cup @bobsredmill Super fine cake flour (NOT all purpose flour)
1/2 +2 tbsp cup organic cane sugar
1/2 cup vegan butter, melted
1 1/4 cup almond milk
1 cup blackberries (fresh of frozen)
1/2 tbsp baking powder
1 tsp salt
Preheat oven to 350 degrees F.
Combine 1/2 cup cane sugar, baking powder, salt and flour into a mixing bowl. Mix then whisk in almond milk and melted vegan butter, whisk it all well together. Grease a baking dish with a little vegan butter then dust with flour.
Rinse and pat dry the blackberries. Pour the batter into the baking dish. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle 2 tbsp cane sugar over the top.
Bake in the oven at 350 degrees for 50-55 minutes or until golden and bubbly. Let cool for 10 minutes then enjoy! Especially perfect with a dollop of vegan whipped cream! .
