Let’s talk about food, shall we? ? As the weather turns colder, nothing speaks more to my tummy than this ?here.
.
Made with a simple veggie broth and serve with sauté mushrooms in tamari sauce,blanched bok choy and goji berries!
.
Ingredients:
~ 1 jicama, cubed
~ 2 carrots, chopped
~ 1 bunch spring onion, cut into 2 inch long. White part reserved for soup stock
~ 8-10 mushrooms, soaked until soft and stems removed
~ 2 inch ginger
~ handful of goji berries
~ bok choy, cut in half
~ s&p, sesame oil to taste
~ tamari/soy sauce
~ rice sticks or tofu shirataki

Soup stock – made the night before:
In a large pot filled with 8 cups of water, add jicama, carrot and white part of spring onion, mushrooms stems, ginger – bring to boil and let simmer for few hours. Season with salt and tamari.
If you are able to find Asian broth, you can skip this step completely but I would still add ginger and goji berries for the nutritional benefits.

In a heated pan, add 1 tsp avocado oil sauté mushroom, add 1 tsp tamari and coat mushrooms well. Drizzle with sesame oil and turn off heat.

Cook rice sticks according to package instructions. Blanched bok choy and drizzle with sesame oil for flavor.

In a large bowl, assemble all ingredients like pictured and ladle soup over. Enjoy!!
