Crispy Ravioli stuffed with a Pea & Mint Ricotta: I put all the flavors of spring inside my ravioli. Ravioli is so fun to make especially with friends/family, & so satisfying to eat ? Bonus: If you make this and have left over ricotta filling, it’s great on toast or even on its own.What you need: Dough: 1 cup flour, 1 cup semolina flour, 1/4 cup silken tofu (firm) up to 1/2 cup warm water, 1 tbl olive oil, 1/2 tsp salt, 1/8 turmeric (optional), Filling: 2 cups frozen peas (thaw) 2 garlic cloves minced, 2 green onions finely chopped, 1 /4 cup mint leaves, 1/2 block extra firm tofu using a kitchen towel to squeeze out water the best you can/ no need to press,1 tbl nutritional yeast,1 tsp lemon zest, juice of 1/2 lemon, salt/pepper to taste
1️⃣Using a food processor combine the flour, silken tofu, salt, turmeric on high. Slowly add oil & then water, 1 tbl at a time, after a minute or so it will form a ball, and feel smooth.Wrap in plastic wrap, rest dough 1/2 hr
2️⃣ In medium pan, over medium/high heat add a drizzle of olive oil, sauté garlic and green onion 2 min, add peas, cook 1-2 min on med heat
3️⃣Add peas to food processor with the remaining ingredients, pulse 5-6 times, it should look like ricotta with coarsely chopped peas. Adjust seasonings to taste if needed
4️⃣Time to make the Ravioli: divide dough into 4 slices, take one piece, wrap the rest in plastic wrap. Sprinkle flour on work surface. Roll out dough, thin enough so you can see the shadow of your hand underneath
5️⃣Using a circular 2 in cutter or a narrow glass/empty tomato paste can to cut dough to make wrappers. Place 1 tsp of filling in the center of each circle. Dampen edges of wrapper with water. Place another circular piece of dough on top, & seal by pressing with fingertips.Place on parchment paper, cover with damp towel. Repeat this step until you have used all the dough.
7️⃣ On stovetop using a nonstick pan, cooking in batches, using 1 tbl oil on med/high. Cook 3-4 min on each side or until crisp. Of course you can also boil your ravioli, in salted boiling water, cook until ravioli floats to top about 3-4 min Serve with your favorite sauce ?Happy Monday & Memorial Day ??
