CRISPY CHICKPEAS + CINNAMON ROASTED POTATOES ✨ Fun fact- I had this combo pretty much every single day for lunch in my undergraduate degrees because it was so simple to prepare 🙌🏼 What’s your go-to meal for a quick and easy lunch?!
To make 👇🏼:
Chop 1 large sweet potato and toss with 1 tsp of cinnamon. Then drain and rinse 1 can of chickpeas and toss with a tsp each of smoked paprika, garlic powder + onion powder. Place sweet potato and chickpeas on a sheet pan and roast at 450 F for 25 minutes. Meanwhile, massage some kale with lemon under it turns to a darker green and becomes softer. Once chickpeas + sweet potato are done, add to kale and top with a drizzle of tahini, lemon juice + maple syrup and enjoy! 💛
