Creamy udon-soba noodle mix with a delicious spicy tahini sauce ??? Who knew the wonderful world of Instagram would introduce me to the glorious notion of tahini sauces? The recipe for this is below. Makes about 3 servings ???

Boil noodles according to package directions, rinse and set aside to drain a bit (I used 3 bundles…udon and soba noodle packages are usually separated into 4 little bundles.. At least the ones I’ve used!).?

Meanwhile, thinly slice 2 bell peppers. I used 1 red and 1 orange. Thinly slice 1/4 of an onion and several garlic cloves. Set aside to saute. ?

Whisk the sauce together in a bowl: 3 T water, 3 T tahini, 2 T tamari, 2 teaspoons chili garlic sauce, 2 teaspoons apple cider vinegar, 1 T maple syrup, 1 teaspoon toasted sesame oil, 1/4 teaspoon each cumin and ginger, 1/2 teaspoon garlic powder??

Once noodles are done, heat a teaspoon or two of coconut oil in a pan and saute the veggies over medium heat for about 3 minutes. Then add the sauce to the noodles and toss. Add veggies ??

Top with sesame seeds, peas, or edamame. Also topped mine with black pepper and black sesame seeds. Would be great topped with cilantro also. ??
