Creamy Savoy Cabbage Slaw! ???

Does anyone else really like Thursday’s? Okay, it’s not Friday but it’s the perfect day to start getting excited for the weelend, amd I’m all about THAT ?? And to have some creamy slaw as a yummy side dish. I made a large amount this past weekend, and enjoyed for several days as lunch, switching up some additional protein with it (lentils, chickpeas, and tofu).??

1/2 Savoy Cabbage sliced thinly ? 1 cup corn ? 1 cup golden raisins ? 1.5 cups finely chopped bell pepper ? 1 cup chopped walnuts ? 1/2 bundle chopped cilantro (can sub parsley if you’re a cilantro hater!) ? a few tablespoons fresh mint (optional)??

Mix with the creamy tahini dressing from my Creamy Kale & Lentil Salad a few posts back, just double the recipe! You’ll have some extra to save ???
