Creamy Kale & Lentil Salad 🍃🌟🌸 Happy Monday friends!! I hope you all enjoyed the weekend ❤ It’s always a bit too short (I vote for 3 day weekends🙋). But recently I’ve been consciously takibg a more positive view to Mondays, thanks to inspiration and positivity from a lot of you here on the gram. 😘❤

Soooo I am using today as an opportunity to prioritize for the week and to feel gratitude for the small blesssings so far today.🙏🍃🌷

By small, I mean small…the refreshing feeling if a big swig of water when I woke up…the comforting thought of my family as I drove to work…the enjoyable quick convos I had with a few coworkers as I got settled in to the office 👍🌸🌷

It ain’t all roses out here, BUT I’m going to take some big ole whiffs of them whenever I can 😂🙏

Today, sharing a quick and simple salad from this weekend. I did go on a bit of a cooking and baking bonanza this weekend 😉🙋

Ingredients: 🌸 kale 🌸 cooked lentils 🌸 carrots 🌸 bell peppers 🌸 cherry tomatoes 🌸 creamy dressing 👍🙋

Cut the stems off of leaves of kale and massage them with your fingers with a small amount of oil or lemon juice. Then add plenty of chopped bell pepper, in different colors if you’re feeling fancy, sliced cherry tomatoes, finely chopped carrot, finely chopped red onion, and cooked lentils. It adds more flavor to cook the lentils and vegetable broth or you could add some salt during the cooking process. Add the creamy dressing below. The dressing will taste quite salty on its own, but it’s going to cover a large salad. Feel free to halve the salt. 🌸

Creamy Dressing: 1/3 cup tahini 🌸 juice of 1 lemon 🌸 2-3 T water 🌸 1/2 t kosher salt 1/2 t pepper + 1 t italian seasoning + 1 T maple syrup (optional) 🍃🌈🌸
