?Creamy herbed cashew sauce with pasta?Recipe: Soak 1 cup raw cashews in boiling water for about 15 minutes. Drain and blend with 1 cup vegetable broth until smooth. Cook 12oz pasta as per packet directions. Drain and reserve 1 cup cooking liquid. Sauté 3 shallots (finely chopped) in a little olive oil or veggie broth until translucent. Add 2 minced garlic cloves and 3/4 tsp dried thyme (or 1 tbsp chopped fresh thyme leaves) and sauté another minute. Add 1/3 cup vegetable broth and stir to incorporate. Mix in cashew cream (and salt/pepper to taste). Bring to a boil before reducing heat and simmer until thickens. Mix in cooked pasta and reserved pasta cooking liquid. Heat until warmed through. .
