This dish is perfect as a casual side dish or as lunch (like I had today!), and is making me all excited and reminiscent about warm weather gatherings! This is me trying to bridge the gap between now and warmer times ? .

Recipe: In a large bowl, combine 2.25 cups brocc florets cut small and steamed just until bright green + 1 15 oz. can rinsed, drained beans (used great northern) + 3/4 pint sliced cherry tomatoes + 1.5 avocados chunked + 1 cup corn. ??

Mix dressing: 1/3 cup pourable tahini + 3 T red wine vinegar + 1.5 T maple syrup + 4 T water + 3/4 t kosher salt + 1/2 t black pepper + 3/4 t each chili powder and cumin + 2 T finely chopped red onion (optional but adds flavor) + dash of cayenne (optional for heat). ??

Add dressing to veggies, with juice of half of a lime (optional), stir, and top with 2 T chopped cilantro ????
