Corn & Tomato Cheezy Quesadillas w/ Pineapple Mango Salsa ???

Hi Friends! Sharing a 10 minute lunch from this weekend, that’s too easy and tasty not to have on repeat this summer ???

On a tortilla, spread a layer of cheese (used @daiyafoods
cheddar), chopped tomato and corn with a dash of chili powder, salt and cumin. Place another tortilla on top and cook on medium low until cheese melts. Flip over before tortilla gets too burned ? and cook until crisp. ???

For the salsa, pat dry 1/3 cup each diced mango and pineapple (frozen thawed works). Add 1/3 cup diced tomato and finely chopped bell pepper, 1 tsp olive oil (optional), and juice of 1 lime. Add 1 T minced jalapeno if desired. Add a dash of salt, pepper, and chili powder. You can add sriracha if you prefer. Add some fresh mint, or cilantro works. ???
