These little hitters make for a cool treat to keep available in the freezer for when you want a quick sweet snack. I find them best when they are frozen and allowed to thaw for 5-10 minutes. The texture is best when you do this. I’ve made these with applesauce in place of the Greek yogurt and it works just as well but they do have a slight apple note to them.
INGREDIENTS
~3 tbsp (20g) oat flour
2/3 scoop (20g) whey protein
~2.25 tbsp (20g) coconut flour
~1/4 cup plain non fat Greek yogurt
1/4 tsp (1g) stevia or sweetener
~2 tsp (10g) mini chocolate chips
PREPARATION
1. Measure out your Greek yogurt and whey protein. Mix thoroughly in a bowl until incorporated
2. Mix in the coconut flour, stevia, and oat flour until a dough like consistency is formed.
3. Stir in chocolate chips.
4. Create a bunch of bite sized pieces and freeze.

❓Can I swap the flour?
❗️Oat flour, yes. Coconut flour no.
❓How did you make them perfectly spherical?
❗️Make the small pieces and then roll them between your palms. This step isn’t necessary if you don’t want to do it.
❓My dough is too dry.
❗️I used metric measurements not volumetric. Coconut flour is very drying and using exact weights is going to be better because you can ensure you have the same amount I used when developing the recipe. The volumetric measurements are estimates. You may need to adjust liquid as you go if you use volumetric measures.
❓Why do I have to mix the whey and yogurt first?
❗️You don’t but it makes the whey dissolve a bit better so you don’t get any harsh protein flavor.
