COCONUT LENTIL STEW ✨ okay, let’s get one thing out into the open- this is not the most beautiful stew I’ve ever made 😂 But I can say that it’s delicious. To make 👇🏼:
Sauté 1 diced yellow onion, 1 large sweet potato, 3 stalks of diced celery, 2 large diced carrots + 4 cloves of minced garlic in a large pot until the onion is translucent. Add 1 cup of dried green lentils, 1 can of diced tomatoes, 1 can of coconut milk, 2 cups of veggie stock, 2 tsp curry powder, 2 tsp smoked paprika, 1 tsp turmeric, and salt and pepper to taste. Bring to a low boil for about 15 minutes until lentils are cooked and sweet potatoes are tender. Serve and enjoy! ✨
