Celebrating SEAFOOD SUNDAY with a twist on SHRIMP “BLAT” (bacon, lettuce, avocado, tomato) stuffed sweet potatoes! Sautéed BBQ spiced Shrimp, spinach, avocado, tomato and bacon bits: SO DELICIOUS. Made these for my boyfriend and I the other night and they were a hit! Takes no time at all. They would make a fantastic meal prep idea or just a tasty meal or snack ? I drizzled over some @bertolli_us olive oil, amazing for your health and such a tasty brand! It’s the only olive oil I’ve been using lately. Tell me: how would you eat this? Pick is up like a sandwich or cut it with a knife? I mean, it’s kind of like a taco right?! Happy Sunday loves! I’m off to cook for a dinner party tonight!



Deets: 2 sweet potatoes cooked (I precooked these in my pressure cooker so I had some for ready for use), stuffed with steamed spinach, mashed avocado, tomatoes, red onion, yellow peppers, leftover sautéed shrimp seasoned with BBQ spice, leftover crumbles bacon and a drizzle of @bertolli_us olive oil. #ad #bertolliquality #qualityoliveoil #therecipeissimple
