Celebrating Friday with these VEGAN BLACK BEAN LOADED FRIES ✨ I know this may not be the prettiest picture I’ve ever taken, but rest assured that this recipe will make your heart sing with smokey black bean and vegan cheesey goodness ?? What’s your favourite topping for fries?! ?.

To make (serves 3) ??:
Slice about 5 large potatoes fries and toss in garlic powder + black pepper, then bake for 25 minutes at 450F. Meanwhile, drain and rinse a can of black beans, then saute over medium heat in a pan with 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder + 1 tsp chili powder. Saute until the beans start to open. Meanwhile, make cheese sauce by boiling 1 cup of diced yellow potato + 1/2 cup of sliced carrots. Once fork tender, blend until smooth with 1 tbsp lemon juice, 3 tbsp nutritional yeast, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp salt, 1/4 cup avocado (or light tasting) oil + 1/4 cup veggie stock or plant-based milk. Once all components are complete, combine together + enjoy! ?
