Cauliflower Mac & Cheese

This is my favorite method for getting cauliflower into my diet. It’s obviously not as good as regular mac and cheese but it is infinitely better than regular gross and disgusting cauliflower 😎

Cauliflower is very low on my power rankings of vegetables. Don’t get me wrong, I think they all suck, but cauliflower is definitely in the bottom half. If you want to see a video of this dish being made, scroll back on my feed a few weeks, there is one on there. It’s actually pretty quick and easy to make. Just heat up the cauliflower, chop it up into small macaroni sized pieces, make the bechamel sauce and stir in the cauliflower. The bechamel is made by making a roux, stirring in the milk, then melting half cup of the cheese. Top the finished product with the rest of the cheese. If that means nothing to you, go find the video. .

The last time I posted this someone asked me “Why wouldn’t you just make regular mac and cheese? This is stupid.” Obviously I make it with cauliflower because I want an easy way to get in an extra serving of vegetables you dork. And because I don’t eat wheat. Next question. .

Now let me answer some of the questions I know will get asked even though I put the answers here because some people don’t read the caption and it makes me blood red mad 😇

What kind of milk should I use? .
➡️I used whole, you can probably use whatever. .
Can I use regular flour?
.
➡️Yes. Anything that will form a roux will work. .
Do I have to use frozen cauliflower?
.
➡️No but if you use fresh you need to cook it first. .
Is it 246 calories for the whole bowl?
.
➡️No. It makes 3 servings and says right underneath “per serving”
