Cauliflower & Eggplant Alfredo (nut-free) 💚🍆💚Plants are seriously amazing. Blend this veggie & fruit together (yup, eggplant is a fruit) & you can get the most creamy & delicious sauce with no animals harmed🙌🏼#peacebeginsonyourplate Recipe below:⬇️:
What you need: 1 box of pasta (16 oz), 1 small eggplant diced into 3/4 in pieces (about 2 cups), 1 small cauliflower head cut into 3/4 in florets, 1 tbl olive oil, 3 garlic cloves minced, 1 tsp +1 tbl vegan butter, 1 cup non dairy milk, 1/4 cup nutritional yeast, salt/pepper to taste. What you do:
1️⃣ Cook pasta according to directions, reserving 1/2 cup pasta water
2️⃣ Place eggplant & cauli in large mixing bowl, add oil, 1 tsp salt, and 1/4 tsp pepper, mix until evenly coated
3️⃣ Spread eggplant & cauli pieces on parchment lined baking sheet.Roast at 400 F for 20 min rotating & shaking tray half way through cook time
4️⃣On stovetop, in a non stick pan add 1 tsp butter, when melted, add garlic, heat on low/med until soft & fragrant.Set aside
5️⃣After cauliflower & eggplant have cooled a bit, peel off skin of eggplant pieces.
6️⃣ In high speed blender, combine milk, eggplant, cauli, sautéed garlic, 1 tbl butter, nutritional yeast, salt/pepper to taste. Gradually increase blender speed to high. Process till smooth & steam is coming from sauce 2-3 min
7️⃣ Pour sauce on to pasta, mix until coated, using reserved pasta water a bit at a time to help ensure that sauce coats evenly. Top with fresh herbs 🌿 I topped mine with chopped parsley. Enjoy!!!!
