AVOCADO SUSHI ROLLS✨

2 cups Sushi rice
3 cups water
1 1/2 tbsp rice vinegar
1 tbsp cane sugar
1 tsp salt
Soy sauce for dipping
1. Combine rice and water in a sauce pan . Bring to a boil then cover with lid, reduce heat to low and simmer for 20 minutes or until rice in fully cooked. Fluff with fork and add rice vinegar, salt and cane sugar. Mix to combine.
2. To a clean working surface lay down a piece of cling wrap the size of your seaweed sheet then lay seaweed sheet on top. Use your hands to spread rice evenly onto sheet, leaving 1/2 inch of seaweed empty from the bottom. Then carefully flip. Arrange sliced avocado across the center of the seaweed sheet. Lift the cling wrap and roll over the avocado once and press down. Then roll again, tightening with your hands gently. Set aside (wait to cut) and continue with remaining ingredients.
3. Use a sharp wet knife to slice the rolls. Serve with soy sauce and any other dipping sauces you would like!
