Baked Buffalo Onion Rings???: Have you ever taken a bite out of an onion ring & the coating just fell off, & then all you are left with is an onion string? For onion ring connoisseurs, this catastrophe is called the dreaded “worm” effect – which I learned through extensive research aka @seriouseats Well no worms here because blanching the rings & then pealing off its inner paper like membrane prevents all that from happening ???Enjoy & it’s Friday yayyy?
What you need: 1 large sweet onion cut into 1/2 in slices then take apart slices & separate into rings, 1 cup flour , 1/2 tsp cayenne, 1/2 tsp salt, 1/4 tsp pepper, 1 cup coconut milk, 3 tsp apple cider vinegar, 2 tbl hot sauce ( I used Franks) , 1 1/2 cups Panko bread crumbs, 2 tsp smoked paprika, 1/2 tsp garlic powder. For the Buffalo Sauce: 1/2 cup hot sauce, 2 tbl coconut oil, 1 tbl organic sugar (I used coconut), 2 tsp apple cider vinegar or Store bought
1️⃣ On stovetop, blanch onion rings in salted boiling water about 4 min, scoop out with strainer, place in large mixing bowl filled with ice until rings cool
2️⃣ Spread out rings on kitchen towel & peal off the inner membrane from each ring, you don’t need to go crazy, it should come off fairly easy, also some of the membrane might have fallen off in the boiling water so it’s all good.
3️⃣To bread rings set up 3 bowls, one bowl with flour/salt/pepper/cayenne , second bowl with coconut milk, apple cider vinegar, hot sauce,last bowl with Panko/paprika/garlic. Line large baking sheet with parchment paper misted with oil
4️⃣Take onion ring piece toss into flour bowl getting all areas, dip into milk bowl shaking off excess, then into Panko bowl making sure it is completely covered, place on baking sheet. Repeat until all rings pieces are coated.
5️⃣Bake at 450 F for 10-15 min flipping halfway
6️⃣ While onion rings are baking make the buffalo sauce.Whisk all sauce ingredients over low until coconut oil is melted & sauce is warm
7️⃣Drizzle desired amount of sauce on onion rings. I served my rings with some extra buffalo sauce & store bough vegan blue cheese for dipping ?
