Baked Balsamic Tomatoes & Eggplant ???

Hi friends! Sharing a simple recipe for a really tasty side dish that will make your kitchen smell like your favorite Italian restaurant ??

I had an eggplant and tomatoes on hand along with some basil. Together with a few pantry staples, this came together so easily. The tasty recipe is below! ????
.
Slice an eggplant and 2 large tomatoes a bit less than 1cm thick, and arrange in a large deep baking dish, as shown. Whisk up: 2 T olive oil, 1/4 cup balsamic vinegar, 1 T Agave or maple syrup, 1/2 tsp each dried basil, garlic powder, kosher salt, pepper and oregano. Drizzle evenly over veggies, making sure to drench the eggplant slices. ???

Bake at 400 degrees for 15 min, then go in and spoon the liquid over the veggies again, cook another 15 min, spoon again then top with 3 T seasoned breadcrumbs or seasoned panko, 1/4 cup sliced kalamata olives, and 2 T capers. Bake another 15 min and serve with pasta or some crusty bread for dipping! ???
