AVOCADO PESTO PASTA ? (RECIPE BELOW) I really love how avocado makes everything so rich and creamy. And I honestly don’t like avocado as is but I love it in sauces, dips, sandwiches, and in sushi!

Anyway, how are you spending your Sunday? I had a lunch buffet with family today, watched The Incredibles 2, then had some Japanese food for dinner ?? __
AVOCADO PESTO PASTA

2 tomatoes, chopped
4-5 pieces of sun-dried tomatoes, chopped
3 cups cooked pasta of choice
1 7-inch zucchini, spiralized (optional, you can sub for more pasta)
1 tbsp olive oil __
2 1/2 tbsp basil pesto (easy basil pesto recipe on my blog)
3-4 tbsp fresh avocado (I used half an avocado and just scooped it out)
2 tsp lemon juice __
1. Add everything into a food processor. Adjust according to taste (you can add in more lemon juice if you like it a bit more sour). 2. Heat a pan. Pour in the olive oil and sauté the tomatoes.
3. Add in the spiralled zucchini and sauté until tender.
4. Add in the cooked pasta and avocado pesto. Mix well.
