Avocado Pesto & Crispy Gnocchi: I made this for dinner last night for a quick and tasty weeknight meal. Everybody loved it. I mean what’s not to like? II’ve been making this pesto since I became vegan 3 years ago and it never ever disappoints. Also, I get to use the fresh basil from my container garden ?As for the gnocchi, it’s store bought. I cooked it according to directions. Then I get them crispy by just melting some butter ( well lots of butter ?) in a non stick pan, toss the gnocchi in to coat, and leave them alone for about 10 minutes flipping half way through.I topped it off with toasted pine nuts and fresh basil.
