Asian style cold noodles with homemade chunky tomato sauce?
Happy Monday, friends?, hope you had a great weekend. Sharing a simple & appetizing noodle dish with homemade sauce, yummy tofu crumbles & a spicy vinegar dressing.?
Recipe (serves 2-3)
Ingredients:
~ 2 servings noodles of your choice (used round @ottoginoodle wheat noodle)
~ 4 tomatoes
~ 1 pack firm tofu, drain well
~ 1 teaspoon minced garlic, 2 teaspoons minced ginger
~ shredded cucumbers
~ oil, salt, sugar (optional)
?Tomato sauce:
✔️Make a slit ‘X’ at the bottom of the tomatoes. Place tomatoes in a pot with water, turn to boil & cook until tomato skins peel off. Drain & cool down, peel the skin off and roughly chop it up.
✔️In a heated pan with 2 teaspoons oil, slowly pour in tomatoes & stir continuously, season with salt. Depending on the sourness, you may add a bit of sugar to balance it off.
?Tofu crumbles:
✔️In a heated pan with no oil, mash tofu into crumbles & cook until they turn golden brown. Add in 2 teaspoons oil, minced garlic & ginger, cook until both ingredients turn a bit brownish, not burnt.
✔️Season with 2 tablespoons soy sauce, 2 teaspoons maple syrup, 1 teaspoon toasted sesame oil. Adjust taste accordingly. Set aside.
✔️Prepare a bowl of cold water with ice. Cook noodles according to package instructions, then place noodles in the ice bath & drain well.
?Noodle dressing: Mix together 4 tablespoons soy sauce/tamari, 2 tablespoons Chinese black vinegar, 2 teaspoons toasted sesame oil, 2 teaspoons minced garlic & 1 teaspoon homemade chili crips with oil until well combined.
✔️Place noodles in a bowl with tofu crumble, tomato sauce, shredded cucumbers and serve with noodle sauce for a delicious meal.
