Any rice and curry lovers out there? 🙋🏻 And I’ve got to admit, I MISS RICE since I’ve been eating A LOT of bread here in Europe lately haha 😅 But anyway, I’ve got this bowl of really easy CURRY FRIED RICE! Recipe below! Fried rice is one of my go-to quick meals and I love trying out different flavors!

Let me know what your go-to fried rice flavor combinations and mix-ins are! I usually just opt for whatever veggies I have with the usual soy sauce but I like o mix it up once in a while!

CURRY FRIED RICE
2 cups cooked rice
1 tbsp sesame oil
1 tbsp curry powder
1 tbsp diced onions
2 cloves garlic, minced
1/2 to 1 tsp salt (adjust depending on desired taste)
Carrots, diced
Purple cabbage, chopped
Peas
Bell peppers, diced
1. In a pan, heat the sesame oil.
2. Add in the onions and sauté until tender. Add in the garlic and sauté as well.
3. Add in the carrots and let cook for a few minutes before adding the other vegetables. You can opt to add some water for carrots to cook well.
4. Add in the rice and curry powder. Mix well.
5. Enjoy while hot!
