An easy Teriyaki Fried Rice 🍚 Get the full recipe below! For this recipe I used @renucciriceph’s Dalisay rice, which was recently awarded the 3rd best rice in the world, and is locally and directly sourced from partner farmers in Leyte. Not only is their rice of good quality, but also supports the livelihood of our farmers who work so hard to grow food for us to eat.
It’s also been a tough year for our local farmers given the rice tariffication law (which liberalised rice imports) that greatly impacted rice prices in the country so farmers are forced to sell their rice at extremely low prices and barely make a profit. The recent typhoon Tisoy (Kammuri) also destroyed a lot of lands and crops so I can’t stress enough how important it is to buy and support local whenever we can.
Anyway on a much lighter note, you can find the recipe for the fried rice below. Happy weekend, guys!
Teriyaki Fried Rice
Good for 2-3 servings
3 cups cooked and cooled rice (I used Dalisay rice from @renucciriceph)
1 block extra firm tofu, sliced into cubes
1/4 cup bell peppers, diced*
1/4 cup corn*
1/4 cup carrots, diced*
1/4 cup peas*
2 garlic cloves, minced
1/3-1/2 cup teriyaki sauce, adjust depending on desired taste (recipe in comments or on my blog)
2 tbsp sesame oil or other oil
Sesame seeds, for topping *Note: the veggies are up to you! I used a frozen mix of corn, carrots, and peas.
Heat a large pan. Pour 2 tbsp oil.
Sauté the garlic until slightly golden brown. Add in the vegetables and tofu.
Cook until tender. Mix in the rice.
Pour in the teriyaki sauce and cook for 2-3 minutes.
Turn off heat. Feel free to add more teriyaki sauce before eating if you’d like. Garnish with some spring onions and sesame seeds. Enjoy!
