An easy oven tray side dish that’s warm, cozy and perfect for Fall! ???? Plus, this is equally yummy using butternut squash in place of the sweet potatoes. Enjoy the night, friends!??

All you need are 3 sweet potatoes, 1 red bell pepper, 1/2 white onion, 2 large handfuls of baby spinach, spices, and around 1/3 cup of sliced almonds (or pumpkin seeds!). To prepare, preheat oven to 375 degrees Fahrenheit. Place diced sweet potatoes onto nonstick foil lined tray. Drizzle with 2 T olive or coconut oil, toss, and season with 1/2 teaspoon salt and pepper. Cook uncovered for 15 minutes. ??

Add diced onion and red bell pepper, 1 T more olive oil, 1/2 teaspoon each salt and pepper, 1/2 teaspoon each basil, dried parsley, garlic powder and oregano. Toss to coat. Cover with foil. Cook additional 15 minutes until everything is tender. Add spinach and gently toss, and spinach will begin to wilt. Sprinkle with almonds and serve. ???
