#ad BRUNCHING! When the boyfriend and I are both home working and prepping for our ski trip…we brunch HARD 🙃 Happy Wednesday loves. Over here getting ready for a trip away and also trying to finish a little work up 🙈 My boyfriend is working from home so we decided to take the morning off and enjoy a solid brunch. We won’t be here for Thanksgiving dinner so getting a little holiday in. Made my FAVORITE sweet potato oatmeal pancakes, bacon and eggs, and served with some smoked salmon and a bunch of toppings! I’ve been LOVING this creamy yogurt from @IcelandicProvisions. It’s super creamy, sweet but low in sugar! I picked some up at @Target when I was shopping for the trip. They are available in-store only at @target…so while you are doing your holiday shopping (because I know a lot of you will be at Target this week) you should grab some! Today I went with smoked salmon, eggs, chocolate chips, berries, bananas and vanilla yogurt! How would you have loaded up your plate from this spread?

Pancake Recipe: blend together 2/3 cup gluten free oats (64 g), 1/4 cup Millet flour, 2 eggs (or sun with 4 whites), 1/3 cup white sweet potato (cooked or steamed), 1/4 teaspoon xanthan gum, 2 teaspoon baking powder, 1 teaspoon vanilla, 1/4 teaspoon salt, 1/2 cup almond milk (or more if needed).
