Yakisoba, anyone??
Happy FriYay?. Any noodles lover here? I cook noodles at least once a week, and Yakisoba is one of our favorite, easiest dish ever. Using store-bought noodles, you can add your favorite veggies to make it into a meal. Just pair with any protein you love.?
Recipe (makes 3 servings as each pack comes with 3 noodle cakes)
Ingredients:
~ 1 pack fresh *Yakisoba noodles, loosen up with fingers and rinse with water, drained
~ 1 small onion, wedged
~ 1 1/2 cup chopped cabbage (more as you wish)
~ 1 small ?, cut into match stick
~ 8 caps dried shiitake ?, soaked until soft
~ 1/4 cup chopped scallions, white part separated
~ oil
Sauce:
~ 1 or 1 1/2 tablespoon vegan Worcestershire sauce (used @annieshomegrown )
~ 2 teaspoon stir fry sauce (optional)
~ 2 teaspoon ketchup
~ 1 1/2 teaspoons soy sauce/tamari
~ 1-2 teaspoons maple syrup, depending on which ketchup brand you use

In a heated pan with 3 teaspoons oil, sauté onion and white part of scallions until soft and fragrant, add shiitake mushrooms and ?.
Then add noodles, and stir continuously, add sauce and cabbage, & cook for 2-3 minutes until cabbage begins to wilt. (I love my cabbage with crunch, so I didn’t cook for too long). Season with salt/more soy sauce if needed. Finally stir in chopped scallions and turn off heat. Serve warm with some sesame seeds. Isn’t it easy?

*I found Yakisoba noodles in the freezer or refrigerated section at the Asian supermarket. You may substitute with dried ramen.
