Happy Thursday, everyone🤗. You know my love for tofu and noodles and I have been using @housefoodsamerica firm tofu as the texture is what I need to create different dishes here.💗
Recipe (serves 2-3)
~ 1 pack of @housefoodsamerica firm tofu, drained well and cut into strips
~ 1 – 2 bunch of dried udon noodles (cooked based on package instructions and rinse with ice water, set aside)
~ 1 cup shredded carrots and cucumbers, more if you like
~ 1 teaspoon grated ginger, 3 cloves of minced garlic
~ sesame seeds & oil, salt to taste
🍃Tofu sauce (whisk together until well combined) – this can be made ahead of time:
~ 1 tablespoon tamari or coconut amino or soy sauce, 1 teaspoon sesame oil, drizzle of maple syrup
🍃Noodle Sauce (whisk below until well combined):
~ 1 tablespoon tamari or soy sauce, 3 teaspoons sesame paste, 3 teaspoons chili crisp, 2 teaspoons maple syrup, 1-2 teaspoons sesame oil and 1-2 tablespoon hot water to thin down sesame paste
In a heated non-stick pan with a little oil, pan fry tofu strips until lightly golden brown on each side. Then, push tofu aside, and add a little more oil, sauté garlic & ginger until fragrant, add in tofu sauce and coat well, let tofu absorb all the sauce.😊 Turn off heat, taste test and sprinkle with sesame seeds. Set aside.
Place cooked and drained noodles in a big bowl, toss with sauce and veggies – serve as is or with more crispy chili flakes.
